Penne with Fresh Tomato-Arugula Sauce

Ingredients:

• 12 oz. Penne Pasta
• 1 lb. Tomatoes, diced (about 2 cps)
• 3 cps Sweetwater Growers Baby Arugula
• 1/2 cp Sweetwater Growers Micro Basil
• 2 tbs Sweetwater Growers Garlic Basil Oil
• 1 tbs Balsamic vinegar
• 1/2 tsp Salt
• 1 cp Parmigiano-Regiano, shaved thin (about 3 oz)

Preparation:

Cook pasta according to directions, drain. Meanwhile, in a large bowl combine tomatoes, Sweetwater Growers Baby Arugula, Sweetwater Growers Micro Basil, Sweetwater Growers Garlic Basil Oil, vinegar, and salt. Add cooked pasta to bowl, toss and top with cheese shavings.
